Every Summer I have an abundance amount of zucchini in my garden, I can only eat so much, so of course I have to make something sweet out of some of them. See my tips at the end of the recipe for variations. If you think you don't like zucchini or want your kids to eat more veggies, you have to try this. I promise you, you can't even taste the zucchini, it just adds alot of moisture. Especially if you add chocolate, your kids will try it. Enjoy!
Zucchini Bread:-
3 eggs
1 cup vegetable oil
2 cups sugar (see tip below)
2 cups zucchini (see tip below)
1 tbs vanilla
3 cups AP flour
1/2 ts baking powder
1ts baking soda
1ts salt
2ts cinnamon
Preheat oven to 350 degrees
Grease and flour 1 large loaf or I like to make 3 mini loafs
Combine eggs, oil, sugar, zucchini and vanilla in mixer. Mix well
In another bowl, mix 3c flour, baking soda, baking powder, salt & cinnamon
Add dry ingredients slowly to the zucchini mixture. mix well
Pour into repared loaf pans
Crumb Topping:-
1/2 cup brown sugar
1/2 cup flour
1/4 cup soft butter
Mix brown sugar and flour
Cut butter into sugar & flour until it is crumbly
Sprinkle evenly over batter
Bake for 30-45 mins depending of size of loaf pan you are using. Bake until slightly browned and toothpick comes out clean.
TIPS:-
I use half regular sugar and half Splender. It cuts down on calories. Trust me, no one will ever taste the difference.
Use the food processor to grate zucchini, Its alot of work to do it by hand.
I mentioned I use 3 mini loafs because I like to make an assortment of flavors. I dont add the cinnamon to the main batter, then I divide the batter into 3 bowls. you can add what ever you like.
My favorites: Chocolate chips and dried Cranberries
Strawberries and Orange zest & juice of that orange
Fresh Rosemary & lemon zest & juice of that lemon (weird I know, but it works!)
